Today’s industrial food system is responsible for nearly one-third of global greenhouse gas emissions. Yet within communities across Southeast Asia, ancient food traditions and regenerative practices offer powerful pathways toward resilience and hope. The Climate-Gastronomy Learning Journey explores how gastronomy becomes a practice of regeneration, connection, and healing — transforming the way we grow, share, and think about food.
This program cultivates food literacy and empowers participants to become food citizens — people who understand how food is grown, processed, distributed, and shared, and who take responsibility for the impact of their food choices. Through immersive experiences across Thailand and Vietnam, participants engage directly with regenerative food systems, community-led sustainability initiatives, and visionary chefs and farmers who are redefining the relationship between food and the environment.

Day 1: Bangkok Exploration - Arrival and introduction to Bangkok’s food landscape, exploring the intersection of urban food culture and sustainability

Day 2: ChaonaMahanakhon Eco-Village - Immerse in the Sufficiency Economy Philosophy through hands-on learning at this pioneering eco-village community

Day 3: Rain Tree Khao Yai Hotel - “Learning with Nature” — explore biodiversity, agroforestry systems, and the connection between natural ecosystems and food production

Day 4: Travel to Vietnam - Journey from Thailand to Vietnam, bridging two food cultures and sustainability traditions

Day 5: Da Nang & Naman Retreat - Discover bamboo architecture inspired by Vietnamese culture, and explore how design, nature, and gastronomy intersect in Central Vietnam

Day 6: The Field Restaurant, Hoi An - Experience a forest garden model with over 200 plant varieties and a zero-waste approach to gastronomy. Reflect on the question: “ECO or EGO?”

Day 7: La.Kao Tea House & Community Learning - Discover ancient tree teas sourced from natural tea regions, and engage in community learning tourism experiences that connect food, culture, and place
